Participating stores offer dishes made with seasonal ingredients such as fresh uni, taka ebi, and kibinago caught in the city. Akune's purple sea urchin grows by feeding on rich seaweed from the East China Sea. The season runs from March to May, and although the meat is small, it has a deep flavor and sweetness. The fresh uni used for uni don is characterized by the creamy texture of the board-formed uni that is commonly seen. Enjoy the pure taste of Akune's uni. ■Notes Sea urchin fishing is affected by weather, so quantities are limited. Reservations are recommended in advance. *Some stores do not accept reservations.
