The crayfish sourced at this time of year are not the American crayfish commonly found in Japanese ponds and marshes, but rather those that inhabit Lake Akan in Hokkaido. Crayfish grown in cold, clear water are large, meaty, and delicious! Enjoy a dinner course featuring simply boiled crayfish, seasoned with salt and dill in a large pot, and feel the taste of summer in the Nordic region!
