A special project inviting Mr. Takatsu Ihei, the president of the long-established katsuobushi specialty store 'Ninben', founded in 1699 (Genroku 12), to talk about the charm, history, and food culture of katsuobushi. From Toyama, which has the highest consumption of kombu in Japan, Chef Hamamori of 'Toyama Hama-saku' will discuss the deep魅力 between the representative Japanese dashi culture of 'katsuobushi' and 'kombu'.
